Role Title: Private Botanical Fruitarian Chef (Off-Site Prep & Weekly Delivery)

Position Overview

Seeking a skilled, detail-oriented private chef to prepare 12 to 14 high-calorie, nutrient-dense botanical fruitarian meals per week (2 meals per day, 6 days per week). Meals are prepared off-site at the chef’s kitchen and delivered weekly to Bole, Addis Ababa. All recipes follow an exacting botanical fruitarian framework developed to provide complete macro- and micronutrition without animal products, grains, or vegetative plant parts.

Key Responsibilities

* Adherence to Botanical Ingredients: Prepare sweet and savory dishes exclusively using true botanical fruits, reproductive seed pods, seeds, tree nuts, and fruit-derived spices.

* Antinutrient Mitigation Protocols: Systematically apply controlled soaking, rinsing, sprouting, and low-temperature dehydration (42°C–45°C) to all seeds, nuts, and pseudocereals to eliminate phytic acid and lectins prior to culinary assembly.

* Textural Transformations & Culinary Assembly: Execute specialized structural recipes, including elastic dehydrated coconut wraps, granulated walnut-pepita savory minces, cultured seed cheeses (selit/cashew ricotta), and rich seed milk broths (ye'suf wiha).

* Local Market Procurement: Source fresh produce and clean seeds across primary Addis Ababa hubs: early morning fruit-vegetables at Atkilt Terra (Piazza), whole oilseeds and highland spices at Merkato and Shola Gebeya, and specialty pseudocereals in Bole.

* Hygiene, Packaging & Delivery: Maintain commercial-grade kitchen sanitization; package meals in airtight, labeled containers to preserve freshness across the weekly schedule.

Approved Ingredients List

* Botanical Fleshy Fruits & Fruit-Vegetables: Avocados, tomatoes, zucchini, yellow squashes, pumpkins (duba), eggplants, okra (bamya), green chilies (karia), bell peppers, and cucumbers.

* Sweet Fruits & Drupes: Cavendish/Saba bananas, mangoes, papayas, cactus pears (beles), mature coconut flesh and water, soft dried dates (temir), and dried figs.

* Achenes, Pseudocereals & Seeds: Sprouted quinoa, sprouted buckwheat, flaxseeds (telba), sunflower seeds (suf), niger seeds (nug), sesame seeds (selit), pumpkin seeds, and chia seeds.

* Nuts & Kernels: Activated raw walnuts, cashews, and pine nuts.

* Spices & Seasonings: Ethiopian cardamom (korarima), black cumin (tikur azmud), ajwain (nech azmud), pure berbere/mitmita (pure fruit pods and seed spices only), sacred basil (besobela), cold-pressed avocado oil, cold-pressed olive oil, and unrefined mineral salt.

* Strictly Prohibited: All animal products, culinary grains, roots, tubers (no potatoes or carrots), alliums (no onions or garlic), vegetative stems, and foliar leafy greens.

Qualifications & Requirements

* Demonstrated background in professional cooking, vegan/raw gastronomy, or specialized dietary catering.

* Working knowledge of seed sprouting, safe lactic fermentation, and temperature-controlled food dehydration.

* Strict adherence to food safety, prompt weekly communication, and punctual delivery.

* Salary: 12,000 ETB / month

* Schedule: Weekly delivery drop-off to Bole

* ምግቦችን ከቦታኒካል ፍራፍሬዎች (አቮካዶ፣ ቲማቲም፣ ዱባ፣ ባሚያ፣ ቃሪያ፣ ሙዝ፣ ማንጎ፣ ኮኮናት፣ ቴምር)፣ ዘሮች (ኪኖዋ፣ ተልባ፣ ሱፍ፣ ኑግ፣ ሰሊጥ) እና ለውዝ (ዎልነት፣ ካሹ) ብቻ ማዘጋጀት።

* ዘሮችንና ጥራጥሬዎችን አስቀድሞ በውሃ ማራስ፣ ማብቀል (sprouting) እና በዝቅተኛ ሙቀት (42°C–45°C) ማድረቅ።

* የእንስሳት ተዋጽኦ፣ እህሎች (ጤፍ፣ ስንዴ)፣ ስረ-መሬቶች (ድንች፣ ሽንኩርት፣ ነጭ ሽንኩርት) እና ቅጠላቅጠሎችን በፍጹም አለመጠቀም።

* ግብአቶችን ከአትክልት ተራ፣ መርካቶ እና ሾላ መግዛት፤ ምግቦችን በጥራት አሽጎ በየሳምንቱ ቦሌ ድረስ በሰዓቱ ማድረስ።
